Drying and Dehydration

Food is dried under the sun or in special ovens or freeze-driers. In freeze-drying, the water stored in food is frozen and the ice is removed by sublimation under vacuum 

Water is unavailable for reactions to occur, or for micro-organisms to grow 

Examples: Various dried food products such as fruit, coffee, milk, soups, fish, meat and vegetables
